Oven-Baked Pineapple Pork Chops
8-oz. can pineapple slices, drained and 4 T. juice reserved | 4 pork loin chops |
Combine reserved pineapple juice, soy sauce, ginger and garlic powder in a shallow bowl; add pork chops, turning once to coat. Marinate in the refrigerator for at least 4 hours. Gently toss bread crumbs and paprika in a pie plate; add pork chops, coating both sides. Arrange pork chops in an ungreased shallow 13"x9" baking pan. Bake at 350 degrees for 25 minutes. Turn pork chops; place one pineapple slice on each pork chop. Bake 25 additional minutes. Makes 4 servings. |
It was pretty tasty! I would recommend marinading for the full amount of time suggested. I didn't and wished I did.

I do love Gooseberry cookbooks! Especially their Christmas Book.I did not know about the e-mail. Thanks for sharing. Gosh this looks delicious!
Liz,
These look delish! I don't have many pork recipes (a zillion chicken) so I may try this. I love their catalog~the illustrations especially. The best deal I have gotten is on their throw quilts. I love them for the ends of beds for a little nap or thrown over a chair to look pretty. I'm always surprised to see how many bloggers know & love the "Patch"!!

Love, love GOOSEBERRY. Wish I had more of their cookbooks.
Your roses are gorgeous.
Are you planning a graduation party?
I really like the Gooseberry books and especially the four season ones. Thank you for sharing the yummy recipe.

Love Gooseberry patch also. I have many of their cook books and love their special crafting books for the holidays and such. I bought them all used on Amazon for pennies and I look at them all the time. Love to look at their catalogs also, so many cute pictures to decoupage with. I lucked in and found the lightening bug jar they sell at Goodwill this year for only a couple of bucks, it is really cute and looks just like a jar of lightening bugs.
I AM GOING TO TRY THIS RECIPE! I LOVE PINEAPPLE AND PORK CHOPS, SO I'M SURE THIS WILL BE A HIT!
HAVE A TERRIFIC WEEKEND. LOVE YOUR BLOG~ KEEP UP THE GOOD WORK.
Oh Liz!! Your blog looks lovely, girl!! I have missed a lot!! Love your flowers and your pretty tablescape, and this meal is yummilicious!!
I have looked at those cookbooks, but don't own one. I get most of my new recipes from the internet. NEVER thought I'd be saying that!!
I do have to have a pic, though. If I can't see what it will look like, I usually won't make it.
Hope all is well with you, sweetie!
It's good to catch up!!
Have a glorious weekend!!
Hugs,
Becky
